I love The Beatles and this song. I also love this cover version. Very trippy. I'm not a vegetarian, but my family members are. So were the members of The Beatles.
Anyway. Trying to come up with vegetarian recipes which appeals to the fancy tastebuds my family has. Here's one recipe which worked. Super easy to make.
Also with Christmas season around, why not be with the theme.

Beetroot & spinach soup

1 medium sized white onion, finely chopped
3-4 galic pods, crushed
3 beetroots, boiled
1 cup spinach without stem / baby spinach, coarsly chopped
1 tbsp dried thyme / mixed herbs
salt and pepper to taste
1 tbsp oil to cook
Chop half a beetroot into bite size pieces and keep aside, blend the rest of it into a puree. Heat oil in a pot and sautee the garlic, followed by the onios. Cook till it's translucent. Add the beetroot puree and cook stirring in regular intervals adding hot water little by little till you get the desired consistency. Add the herbs and spinach and bring it to a boil. Season with salt and pepper. garnish with chopped beetroot. Serve hot. Goes well with soft buttered bread.

I had some leftover chicken manchow soup, and there were extra chopped veggies lying. And some garlic rice was already being prepared. Here's what happenend.
